Exploring on paper (pixels). 

These are my first ideas. Having not actually visited the site yet, I'm sure there are flaws. Remember that these are preliminary sketches and ideas, not final designs. 

Wildflower meadows are the top trend in landscaping for the last 10 years. Glens orchard is ideal for such a design due to its large area, and pastoral mountain setting. The reference photos are from a famous designer Piet Oudolf who has done museum gardens all over the world (and is famous for the high line in New York). But I've seen this in areas of parks all over Europe, and in London, etc. It's larger in scale than the formal French intensive style. But it's cheaper and less intensive as the maintenance is minimal. It's a simulation of wild beauty that enhances formal areas by contrast.

I imagine formal hedges around the chapel and the orchard. Boxwoods are ideal but other more native options would be interesting as well.

Fruit trees can be treated in a formal fashion. The plants underneath improve the health of fruit trees. By competing with the tree, the tree sets less fruit and has much less fruit fall in the summer. This means there is less fungus from the rotting fruit splashing spores up onto the leaves.
